Who doesn't love a good square?! We heard that square foods increase your IQ and lifespan by about 37% (source unknown). Actually we're not sure about that- but we are sure that these Banana Date Everything Squares by The Hungry Blondes are deeeee-licious! And that's convincing enough for us!

These are some tasty and guilt free snacks for on the go. We called them "everythingbars because you can substitute some of the fillings for whatever you have in your pantry. Walnuts instead of pistachios? Ok! Raw cacao nibs instead of dried cranberries? Yep! Rolled oats instead of puffed quinoa? Sure, why not! You get the picture.

THE GOODS:

Prep time: 15 minutes

Cook time: 30 minutes

Total time: 45 minutes
(Recipe makes approx. 24 squares)

 

-1 ½ cups pitted dates
-3 tablespoons agave syrup
-¼ cup water
-1 banana
-½ teaspoon salt
-1 cup pistachios, shelled and chopped
-1 ½ cups puffed quinoa
-¼ cup shredded coconut
-¼ cup dried cranberries
-½ cup melted coconut butter (not oil) *optional

THE PREP:

At Home:                                                                                                     

1) Preheat your oven to 350F. Line an 8x8’ baking dish with parchment paper and set aside. In a food processor or blender combine dates, agave syrup, water, banana and salt until a smooth puree is formed. In a medium sized bowl mix the date/banana puree with pistachios, puffed quinoa, shredded coconut and dried cranberries. Press the mixture evenly into your prepared pan and bake for 25 minutes.
2) Once cooled, cut into 24 squares. If you are a coconut lover like we are, dip the bottom of each bar in the melted coconut butter and allow them to harden coconut butter side up. This will achieve a fake yogurt dipped look while also adding a delicious kick of coconut flavour. Store in an airtight container in the fridge for up to 1 week.
3) Wrap 'em up and take them with you for the whole gang to enjoy! (Or for yourself in the car on the way up, whichever!)
