GOOD FOOD // CAMP GRUB 006 // BANANA BREAD HITCHHIKERS

Like every parent said ever- "Don't pick up hitchhikers!..... Unless they are made of Banana Bread." Taking that ever ancient and clever advice, Jessie Snyder of Faring Well has come up with what might be the best (and only?) recipe for homemade hitchhikers. Made of Banana Bread of course!

These little bites are loaded with healthy carbohydrates and fat to keep your energy level up on your next outdoor adventure. Happy hiking!

THE GOODS:

-1 cup raw walnuts
-1 cup freeze dried bananas
-pinch of salt
-1/4 teaspoon ground cinnamon
-5 medjool dates
-2 teaspoons coconut oil
Feel free to swap out the freeze dried bananas for freeze dried blueberries if you are feeling more in a blueberry muffin mood! The medjool dates are my favourite, but raisins could work as well. 

THE PREP:

At Home:                                                                                                     

1) Add the walnuts, freeze dried bananas, salt, and cinnamon to the bowl of a food processor. Blend until a course meal forms. Pit and chop the dates and add them to the bowl. Process until the mixture begins to come together, about 30 seconds.
2) Now add one teaspoon of coconut oil. Blend again for another 30 seconds. Remove the lid and pinch the mixture with your fingers, if it sticks together when pinched it is ready! If still too dry, add the second teaspoon of coconut oil and blend again.
3) Scoop with a tablespoon sized cookie scoop, then cut the round of dough in half in order to roll two smaller balls. Place all of the rolled bites on a parchment lined cookie sheet or plate and pop in the freezer to set for about an hour. Transfer to an airtight container and store in the freezer - when stored this way they can last up to a month.
4) Pack for your adventure when ready and enjoy either cold out of a lunch box or room temp in a small baggie stashed in your pocket. Let these little guys hitchhike with you on your adventures and keep you fuelled!
